Crockpot Chicken Tortilla Soup

2 chicken boneless skinless chicken breasts
  • 2 cans Ro-Tel (I used 1 can of rotel and 1 thing of Med salsa to give a little heat)
1 can black beans, rinsed and drained
1 can kidney beans, rinsed and drained
    1 can corn
    1 onion, chopped
    2 cans low-sodium chicken broth
    1-2 cups of water
    1 pack of taco seasing

    tortilla chips
    sour cream
shredded cheddar or Mexican blend cheese

Put chopped onion, cans of beans, rotel, corn, chicken broth, water, and spices in CrockPot and stir to mix. Put chicken breasts on top of mixture and make sure they're at least partly submerged in liquid. Cook on high 6-7 hours or low 8-9 hours. Before serving remove the chicken breasts from soup and shred, if needed, (sometimes they'll just fall apart on their own, but sometimes they need some help). Return chicken to CrockPot, stir to combine.

Crockpot Taco Soup

Crockpot Taco Soup

This soup can be made thick as a chili, or thin.  It's super easy, makes a ton, and has been a crowd pleaser around here.

1lb cooked boneless skinless chicken breast meat cut up in bite size chunks*
1 large can petite diced tomatoes
1 large can hominy - drained
1 can no salt added corn - drained
1 can low sodium black beans - drained
1 can low sodium pinto beans - drained
1 pkg low sodium taco seasoning*
1 cup low sodium chicken broth, OR 1 cup water

Dump all ingredients into the crockpot.  Stir together.  If it looks a little thick add some more liquid.  Cook on low 6 hours.
*I use about 3-4 Tbl of the McCormick taco seasoning at Costco sold in bulk container.  I've had this soup with beef chunks too, but prefer chicken.
*This soup can be made stove top easily too.  Just stir ingredients together in large pot and let simmer for 1 hour.
Serve in bowls, garnish with cheese, sour cream, and lime juice. YUM!

Whole Chicken Crock Pot

I recently learned that you can cook a whole chicken in the crock pot! With NO water or other liquid! Maybe I am a bit late on this breaking news but there is no way I could not share this with you. Hoping there is a "you" out there anyways!!

What you need:

1 Whole Chicken 4 to 5 pounds
Olive Oil
Paprikia
Fresh Garlic
Salt and Pepper to taste

Spray the inside of your crock pot with non stick spray. Rinse and dry your thawed chicken and remove the insides. Lightly coat with your favorite oil. Add your favorite seasonings or those listed above. Cook on low for 7 to 8 hours. You will know its done when the chicken is about to fall off the bone. Remove from crock pot and serve how ever you like.

I went a step further and made chicken stock while using the bones, skin remaining juices and by adding 5 cups of water. I cooked that all night from about 6pm til 8am the following day. Once I strained all the bones and what not out of the broth I then went onto using the stock for chicken noodle soup which was also made in the crock pot.

It was really the cheapest, quickest and yummiest meal/s we have made in quite some time! Leave a comment to me know if you try it!

I could use some new recipes in my recipe box how about you?

I am starting this blog because I am often scrambling for something new to make for my family. It seems that weeks will go by with the same day in day out type of meals and all tho I spend lots of time looking up new things to make I often never get around to it. Then when I have the desire and lets face it the time to cook something new I can't seem to remember where that awesome recipe went...

I am hoping that you all will join in and post the things your family loves as often as you can. Please e-mail me or Facebook me so I can give you the login information so you can post when ever you want :)

Thanks for making mealtime tastier!!
