Crockpot Taco Soup

Crockpot Taco Soup

This soup can be made thick as a chili, or thin.  It's super easy, makes a ton, and has been a crowd pleaser around here. 

1lb cooked boneless skinless chicken breast meat cut up in bite size chunks*
1 large can petite diced tomatoes
1 large can hominy - drained
1 can no salt added corn - drained
1 can low sodium black beans - drained
1 can low sodium pinto beans - drained
1 pkg low sodium taco seasoning*
1 cup low sodium chicken broth, OR 1 cup water

Dump all ingredients into the crockpot.  Stir together.  If it looks a little thick add some more liquid.  Cook on low 6 hours. 
*I use about 3-4 Tbl of the McCormick taco seasoning at Costco sold in bulk container.  I've had this soup with beef chunks too, but prefer chicken.
*This soup can be made stove top easily too.  Just stir ingredients together in large pot and let simmer for 1 hour.
Serve in bowls, garnish with cheese, sour cream, and lime juice. YUM!
